Harira is like a fiesta in a bowl—a zingy, aromatic tomato soup brimming with chickpeas and lentils. Packed with ginger, pepper, cinnamon, and a forest of fresh herbs, it steals the spotlight during Ramadan, when it’s the star of the table at fast-breaking feasts. So much so, that for many Moroccans, a Ramadan meal without harira means that the meal is incomplete.The name "Harira" comes from the Arabic word for silk, a nod to the soup’s velvety texture, thanks to the magical thickening powers of eggs or a tedouira blend of flour and water. Sometimes,the tedouira is left to ferment for a couple of days, with a little yeast thrown in for good measure to enhance the flavour.And for a splash of savory luxury, a dollop of Smen, a preserved butter, adds a parmesan-like punch to this already yummy dish. Innsbrook is a magical escape just an hour from St. Louis, overflowing with charming and elegant second homes that belong to some exceptional people. As one of the go-to chefs for these lovely folks, we adore everything about this place—the staff, the homes, the pristine maintenance, and those stunning lakes. One of the most common questions I get on the job from clients is, “ what is your go-to once you get home after cooking us such amazing dishes?” I guess everyone just assumes that as chefs we whip up some incredible treats at the end of our days. But funnily enough, it is always the simplest comfort dishes after a long day that seems to satisfy my needs. The keyword I guess is ‘ comfort’.So here I am sharing what my go-to is after a long day of work😄Curd rice with pickle:Curd rice, the superstar of South Indian cuisine, goes by many names—thayir sadam, daddojanam, or dahi chawal, take your pick! Though mostly seen as a summer dish that cools you down, for me it is the ultimate meal in any season.With endless options for spices, veggies, and garnishes, it's a culinary canvas. Plus, it's a probiotic powerhouse, keeping your tummy happy and healthy! Since it is such a simple dish made of of yogurt and rice accompanied by a little Tadka (cooking the spices before adding to the dish to create a much more aromatic flavour) this dish is absolutely versatile and you can never get bored with the possible variations. My favourite no nonsense way of having it is by adding just a little bit of spicy pickle at the side. Picture this: The phone rings, and on the other end is a former NFL running back, now an otolaryngologist, asking you to whip up a feast for his wife and her pals.At that moment you are so excited that you don’t fully grasp the epic story until it hits you later. Meet Samkon Gado, who sprinted his way through the NFL with teams like the Green Bay Packers, Houston Texans, Miami Dolphins, and St. Louis Rams, only to tackle a whole new field in medicine. It's not everyday you hear of a football star trading touchdowns for stethoscopes and thriving at it too!👏 Samkon’s now a full-blown, practicing otolaryngologist! Talk about a career touchdown!Samkon, being the amazing husband that he is, wanted to make the day extra special by giving a dining experience for his beautiful wife,Rachel and her friends. And on meeting Rachel I can see why!Rachel is a remarkable woman and budding author, and given her family's amazing genes, is bound to have people queuing for her autograph soon. On the day of i woke up with some severe abdominal and back pain but nothing would stop me from making sure these incredible women got what they deserved. So i found myself making my way to Inns Brook which is about an hour away from St. Louis.
